Have you tried using quinoa in pancakes? They yield the fluffiest pancakes that are high in protein.

This easy #vegan #glutenfree pancake recipe that consists of 3 main ingredients (oats, dairyfree milk, banana) and substituted quinoa flour for oats. If you don't have quinoa flour, you can easily make your own by grinding 1 cup toasted quinoa in a high-speed blender or spice/coffee grinder. I highly recommend toasting the seeds first for a few minutes to remove the bitterness (explained in the blog post). .

Served them with a raw chocolate caramel sauce (recipe on the blog), berries, and coconut flakes.
